Diminua o fogo e deixe cozinhar.&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:times new roman;"&gt;Enxague o peixe, corte a cabeça e junte-a ao court-bouillon. Apóie o peixe sobre a grelha da panela, segurando-o fora.&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:times new roman;"&gt;Mergulhe o peixe no líquido e deixe cozinhar em fogo brando de 10 a 12 minutos para cada 1/2kg de peixe.&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:times new roman;"&gt;Retire o peixe da panela e escorra-o bem, colocando-o sobre um prato de servir, grande; cubra-o e leve-o à geladeira.&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:times new roman;"&gt;Forre uma peneira com um pano ralo o coe o líquido de cozimento do peixe, eliminando todos os temperos.&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:times new roman;"&gt;Meça 2 1/3 de xícara de líquido coado, coloque-o numa panela e deixe-o esfriar.&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:times new roman;"&gt;Salpique a gelatina sobre o court-bouillon frio e leve ao fogo brando até dissolver. Despeje-o numa fôrma rasa e leve à geladeira.&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:times new roman;"&gt;Ajudando-se com uma faca afiada, retire a pele de um lado do peixe e elimine-a; vire-o com cuidado e retire a pele também do outro lado.&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:times new roman;"&gt;Decore o peixe com as fatias de limão, a gelatina cortada em cubos e os galhos de salsinha. Junte em fio o leite e bata até obter um creme. Transfira para um tigela refratária e leve ao fogo em banho-maria. Cozinhe, sem parar de bater com um batedor manual, por 4 minutos, mas não deixe ferver. Retire do fogo e reserve. Misture em uma panela o açúcar restante e 1/2 xícara (chá) de água. Leve ao fogo, sem mexer, até obter uma calda em ponto de fio grosso. Retire do fogo, salpique com café solúvel e reserve. Bata as claras na batedeira até obter picos firmes. Sem parar de bater, junte a calda bem quente, aos poucos, e continue a bater até obter um merengue brilhante. Incorpore o creme de leite batido rapidamente à parte, mexa com cuidado e, por fim, adicione o creme de gemas. Despeje em uma tigela e leve ao congelador de um dia para o outro. Antes do sorvete endurecer, mexa a mistura pelo menos quatro vezes. Deixe aquecer bem.
